Description

The Sango is a yanagiba, the single-purpose Japanese slicer for fish and boneless proteins, handmade in Seki, Japan. Its long, narrow 8 inch blade, also available in 10.6 and 11.8 inch lengths, draws through sashimi, crudo, and roast fillets in one pull for glassy, unbroken cut faces.

Features

  • Long, narrow geometry slices in a single pull so delicate fish never tears or shreds
  • The angled k-tip sets precise entry cuts on skin-on fillets and portioned proteins
  • A low, slender blade face means minimal drag through dense, boneless cuts
  • Just as capable carving roasts, ham, and smoked brisket at the table
  • Dark tsuchime-hammered blade over 67-layer suminagashi Damascus, hardened to 60 ±2 HRC
  • Octagonal ebony wa-handle with brass spacers and white turquoise accents, about 6 oz in hand

An octagonal ebony wa-handle framed by genuine white turquoise and brass spacers pairs with a dark tsuchime-hammered 67-layer Damascus blade.

Backed by a lifetime warranty against defects and a 30-day return. Dispatched free and fast from our US storefront.

Each blade is handmade in Seki, Japan, then held and dispatched from inside the US, so it reaches you quickly with no customs fees or surprises.

Returns. 60-day money-back guarantee. If the knife is not right for you within 60 days, return it for a full refund. No restocking fees and no questions asked. Contact our support team to start a return. You cover return shipping back to us, and your refund is issued to your original payment method as soon as the knife arrives. Anything that reaches you damaged or flawed, we replace at no cost.

Lifetime Warranty

Every one of our blades is forged by hand and guaranteed for life against defects in materials and craftsmanship. If a fault ever shows in the steel, the edge, or the construction, we repair or replace it.

It does not stop there. Every knife also comes with free sharpening for life. When the edge eventually softens with everyday use, send it back and we restore it to factory sharpness at no charge, so your knife cuts like new for as long as you own it.

The defect warranty covers manufacturing faults under normal kitchen use. It does not cover ordinary wear, rust from improper drying, accidental damage, misuse such as cutting bone or frozen food, or dishwasher damage. To make a claim or arrange a sharpening, contact our support team with your order number and a photo, and we will make it right.

Care & Maintenance

Hand wash, never the dishwasher. Wash the blade by hand with warm water and a little soap, then dry it straight away with a soft cloth. The dishwasher dulls the edge and damages the handle.

Cut on wood or plastic. Use a wooden or plastic board. Glass, stone, granite, and ceramic will chip a fine edge.

Hone often, sharpen rarely. A few passes on a honing rod every week or two keeps the edge true. When it finally needs sharpening, a whetstone restores it, or send it to us for free sharpening.

Store it safely. Keep the knife on a magnetic strip, in a saya, or in a block, not loose in a drawer where the edge can knock against other tools.

Keep it dry. Never leave the knife to soak or sit wet in the sink. A drop of food-safe oil before long storage protects both the steel and the Damascus pattern.

Sharpest blade I've ever felt

I have handled plenty of knives over the years and none came close to this out of the box. It slipped through a ripe tomato under its own weight, genuinely the sharpest thing I have ever felt.

Almost didn't risk it

Buying a knife I couldn't hold first made me nervous. It arrived better made than blades I have paid double for, and far sharper than I expected.

Sharper than my Wüsthof

Cooked with a Wüsthof for fifteen years and thought nothing would top it. It arrived sharper and lighter, and is quietly my everyday knife now.

Still sharp months on

I was sure it would dull like my old set, the way they always do. Eight months of daily use later, honed just once, it still glides through a tomato.

Best gift I've given

Bought it for my husband and feared it would feel cheap. The Damascus is stunning, the box got a gasp, and he will not stop talking about it.

It really is that sharp

I rolled my eyes at the Japanese-steel claims, then put it to work. Six weeks in a busy kitchen with fish and onions, it is still frighteningly sharp.

Arrived fast and safe

I was wary of ordering a blade online, sight unseen. It shipped from the US in just three days, sealed in a guard, and arrived without a scratch.

Effortless in the hand

I have small hands and feared it would feel clumsy. It is far lighter and better balanced than my old chef's knife, so sharp I nicked myself day one.

Frequently Asked Questions

Who makes these knives?

Every blade is made in Seki, Japan, a city known for over seven hundred years of blade-making. Each knife is folded, ground, and finished by hand in a small family workshop there, then sold direct through this store with no dealer in between.

Is this real Damascus steel, or just an etched pattern?

Real. The pattern is not printed or etched on. It is 67 actual layers of steel, folded and forge-welded around a hardened VG-10 cutting core, then hand-finished in Seki so the flowing suminagashi grain runs all the way through the blade. No two are identical, because the pattern is in the steel itself.

How sharp is the edge out of the box?

Razor sharp and ready to cook. Each blade is hand-honed to a 12 to 15 degree edge before it leaves Seki, far finer than a typical Western knife, so it glides through tomatoes, fish and herbs from the very first cut. No breaking in, no setup.

Will it stay sharp, or dull in a few weeks?

It holds. The VG-10 core is hardened to 60 to 62 HRC, harder than the soft stainless used in most store-bought knives, which is why it keeps its edge for months of regular use rather than weeks. A few passes on a honing rod keeps it aligned between sharpenings.

What happens when it eventually needs sharpening?

You never pay to keep it sharp. When the edge finally needs work, send the knife back and we sharpen it for free, for as long as you own it. With normal home use most owners only need this about once a year.

Which knife should I choose?

Start with the Chef knife (Gyuto) or the Santoku for everyday work, both handle almost everything. Add the Nakiri for vegetables and the Kiritsuke for clean, precise slicing. If you want the full kit, the matched set shares the same steel, finish and handle across every blade and is the easiest way to build a complete block over time.

How do I care for my knife?

Hand wash with warm water and dry it right after use, and store it on a magnetic strip or in a guard rather than loose in a drawer. Keep it out of the dishwasher, where heat and detergent dull the edge and damage the handle. Use it on wood or soft plastic, never glass, stone or ceramic.

How fast will my order arrive, and where does it ship from?

Shipping is free on every order. Your knife ships from our US storefront, not from overseas, and leaves within one business day. Most orders arrive in 2 to 5 days, and tracking is emailed the moment yours is on its way.

What if it is not the right knife for me?

Cook with it and put it to work. If it is not for you, return it within 60 days for a full refund, with no restocking fee. We would rather you use the knife and be sure than keep one that does not fit your hand.

What does the lifetime warranty cover?

Every blade is guaranteed for life against manufacturing defects in the steel, the edge and the handle. It does not cover normal wear or damage from misuse, such as cutting bone or frozen food, prying, or running the knife through a dishwasher. If a blade ever fails on our end, we replace it.

Why is a knife like this priced the way it is?

Because we sell direct. A blade like this normally passes through an importer, a distributor and a shop, each adding margin before it reaches you. Buying straight from the workshop means you pay for the steel and the craft, not the markup in between.

Do they make a good gift?

One of the best. Each knife arrives in protective packaging ready to give, and a blade like this gets used for decades instead of forgotten in a drawer. It is covered by the same lifetime guarantee and free sharpening even as a gift, with no receipt needed, so whoever receives it is looked after for good.
