Description
One knife carries the week. Gyuto translates as the cook's blade, and this one earns it across proteins, produce, and every pile of herbs between.
Features
- Mid-blade curve lets the edge roll through a bunch of parsley without bruising a leaf.
- Behind the curve, the heel runs deep and straight, chopping onion halves clean to the board.
- Up front, a slim point slips under silverskin and handles close trim work.
- The core steel is VG-10, heat-treated until the Rockwell tester reads 60 ±2, which keeps sharpening sessions rare.
- The 67 Damascus layers surface as a flowing grain that no two blades repeat.
- Call it 7 oz of working weight: present in the hand, never tiring.
An octagonal wa grip inlaid with real abalone shimmers like light on water.

Care & Maintenance
Hand wash, never the dishwasher. Wash the blade by hand with warm water and a little soap, then dry it straight away with a soft cloth. The dishwasher dulls the edge and damages the handle.
Cut on wood or plastic. Use a wooden or plastic board. Glass, stone, granite, and ceramic will chip a fine edge.
Hone often, sharpen rarely. A few passes on a honing rod every week or two keeps the edge true. When it finally needs sharpening, a whetstone or a professional knife sharpener restores it.
Store it safely. Keep the knife on a magnetic strip, in a saya, or in a block, not loose in a drawer where the edge can knock against other tools.
Keep it dry. Never leave the knife to soak or sit wet in the sink. A drop of food-safe oil before long storage protects both the steel and the Damascus pattern.

Who is HARUTANI?
HARUTANI designs Japanese-style chef knives and sells them through this store. Our team answers by phone and email, Monday to Friday, 9 AM to 5 PM ET.
Is this real Damascus steel, or just an etched pattern?
Real. Each blade has a VG-10 cutting core clad in 67 layers of Damascus steel, so the suminagashi pattern is in the steel itself, not printed on. No two blades look exactly the same.
How sharp is the edge out of the box?
Sharp and ready to use. The edge is Honbazuke finished to close to 15° per side, a finer angle than most Western kitchen knives, so it cuts cleanly through tomatoes, fish and herbs from the first use.
Will it stay sharp?
The VG-10 core is hardened to 60 ±2 HRC, harder than the steel in most everyday kitchen knives, so it holds its edge well with regular use. A few passes on a honing rod every week or two keeps it aligned between sharpenings.
What do I do when it needs sharpening?
When honing is no longer enough, sharpen it on a whetstone or take it to a professional knife sharpener. Avoid pull-through sharpeners, which can chip a fine edge.
Which knife should I choose?
For everyday cooking, start with the Gyuto (chef knife) or the Santoku; both handle most tasks. The Nakiri is made for vegetables and the Petty for small, detailed work. A duo, trio or full set gives you several blades with the same steel and handle.
How do I care for my knife?
Hand wash with warm water and dry it right after use, and store it on a magnetic strip or in a guard rather than loose in a drawer. Keep it out of the dishwasher, where heat and detergent dull the edge and damage the handle. Use it on wood or soft plastic, never glass, stone or ceramic.
How long does delivery take?
Free shipping within the US, delivered in 2 to 4 weeks. Orders are processed within 1 to 4 business days, Monday to Friday, then delivered by USPS or a local delivery partner. Tracking is emailed as soon as your order is on its way.

Do they make a good gift?
